Ini adalah jamur isi yang sudah matang, enak disajikan dengan saus sambal ataupun acar
These are the fried mushroom, you can eat them with hot sauce or pickles
The stuffed mushroom Portabella Mushroom
Bahan :
  • 1 pack jamur portabella (di jual demikian di supermarket) sekitar 200 gr/One pack fresh mushroom, about 200 g or about six pieces
  • 100 g udang kupas, potong-potong/100 g shelled fresh shrimps, chop
  • 150 gr wortel, kupas dan serut/150 g carrots, peeled and shredded
  • 250 gr bengkuang, kupas dan serut/250 g 'Bengkuang' peeled and shredded or you can use canned water chestnuts
  • 2 batang daun bawang dan 1 batang daun seledri iris-iris/2 green onions and one small stalk celery, chop them
  • 1/2 paprika ukuran kecil potong-potong dadu/1/2 small green pepper, seeded and diced
  • 1 sdm saus tiram/1 tablespoon oyster sauce
  • 2 sdm kecap asin/2 tablespoon salty soy sauce
  • 1/2 sdt merica/ 1/2 teaspoon pepper
  • 2 sdm maizena/2 tablespoon cornstarch
  • 2 siung bawang putih/2 cloves white onions, chop
  • 1 cm jahe parut/1 cm ginger grated
  • 2 sdm minyak untuk menumis/2 tablespoon cooking oil
  • Garam bila dirasa perlu/ salt if needed
Tepung untuk pelapis/Batter:
  • 150 gr terigu/150 g all-purpose flour
  • 2 sdm tepung maizena/ 2 tablespoon of cornstarch
  • 1 sachet Susu Dancow putih (27 gr)/ 27 g white milk powder
  • 200 ml air/200 ml water
  • 1/4 sdt garam/1/4 teaspoon salt

For mushroom and the filling :

  • Jamur sudah bersih dan siap pakai jadi patahkan batangnya/The mushrooms are clean and ready to use, remove the stems, chop them finely
  • panaskan minyak lalu tumis bawang putih sampai harum/heat oils and fried the white onions until fragrance
  • Tambahkan wortel, bengkung, daun bawang dan seledri, paprika, potongan batang jamur, aduk dan masak sampai airnya 3/4 kering/ add the carrots, water chestnuts, green onions, celery, green pepper and chopped stem, cooked until the waters are reduce 3/4
  • Tambahkan saus tiram, lada, garam dan kecap asinya/add the oyster sauce, salty soy sauce, pepper and the salt
  • cicipi dahulu, bila dirasa sudah pas tambahkan tepung maizena, aduk-aduk sebentar. angkat dan biarkan agak dingin/taste it, if you think the composition is oke, add the cornstarch, mixed well and remove from heat. let it cool
  • ambil secukupnya untuk diisikan ke dalam jamunya dan buat gundukan di tengah/spoons the filling mixture into cavities of mushrooms caps, mounding mixture in the center
  • siapkan tepung pencelupnya, dengan cara mencampur semua bahannya/ prepare batter, by mixing them together.
  • Celupkan jamur di dalam larutan pencelup dan goreng hingga matang/Carefully dip mushrooms in the batter coating completely, then dip fry them until golden brown
  • angkat dan serap minyaknya ke dalam tissue makan/drain fried mushrooms in absorbent paper
  • The mushroom are ready to serves
